Changing Leaves & Recipes

The weather may be getting colder, but it’s staying nice and warm in our kitchen! There’s something about this season that constantly has me in the mood to get cookin’!

I am so lucky to have a husband who loves to cook as much as I do. Meals are such a fun way to bring people together and I love sharing that with him. Speaking of, the two of us are suckers for good cooking shows. We found a series on Netflix that is all about family recipes and traditions and that got us thinking; we would LOVE to master some recipes that we can some day pass down to our daughter. We recently decided to start branching out of our comfort zone and regular go-to meals and challenge ourselves to learn one new recipe each week. Some turn out AMAZING and others, well, we’d be okay with never eating it again…haha! Whatever the outcome though, it has been so much fun and so rewarding that I wanted to share some of our favorites with you!

Roasted Butternut Squash Soup. Perfect for cold, rainy nights or anytime you need some comfort food! Soup is one of my favorite things to eat and this one’s delicious!! We paired it with some homemade soda bread.

Creamy Tuscan Garlic Tortellini Soup. I told you we REALLY like soup in our house and this one is a hit! Since my husband and I are both vegetarian we simply omitted the chicken, but we LOVE this recipe and have definitely repeated it!

Margherita Mushroom Pizza. This recipe actually turned us into HUGE fans of portobello-based meals; there are so many different ways you can transform them!

Stir-Fried Swiss Chard and Red Peppers. I’m not sure I’ve met a stir fry that I didn’t like and this one is no exception! We omitted the rice wine, added teriyaki sauce, and served over white rice. AND a side of oranges, just because they’re my favorite 🙂
